Chef Silvano’s culinary journey began in Switzerland and Italy, where he trained at world-renowned hotels before building an extraordinary international career across Europe, Asia, and the Americas. Inspired by his father — also a professional chef — he developed a philosophy rooted in respect for ingredients, technique, and place. His leadership has shaped some of the world’s most prestigious kitchens, from Amanpuri Phuket to Suvretta House St. Moritz and The Splendido Portofino, and most recently as Cluster Director of Culinary at JW Marriott Khao Lak Resort & Spa.
At JW Marriott Khao Lak, Chef Silvano became widely recognised for elevating culinary standards while pioneering sustainability-driven dining. His award-winning Sown & Reborn menu — crafted entirely from ingredients that would otherwise be discarded — positioned him as a leader in circular gastronomy. “Every action in the kitchen creates a ripple — sustainability is not a trend, it’s a continuous circle of awareness, respect, and evolution,” he says.
